  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the gluten-free flour, sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, 1 tablespoon at a time, until the dough comes together.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  5. In a separate bowl, combine the plums, lemon juice, cornstarch, sugar, cinnamon, and vanilla extract.
  6. Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie dish.
  7. Transfer the rolled-out dough to the pie dish and trim any excess dough.
  8. Pour the plum mixture into the pie dish.
  9. Roll out the second dough disk and cut it into strips.
  10. Create a lattice pattern on top of the plum mixture with the dough strips.
  11. Brush the lattice crust with beaten egg.
  12. Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
  13. Allow the pie to cool for at least 30 minutes before serving.
