In a separate bowl, combine the plums, lemon juice, cornstarch, sugar, cinnamon, and vanilla extract.

Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie dish.

Pour the plum mixture into the pie dish.

Roll out the second dough disk and cut it into strips.
