Ingredients
  • 1.5 cup Red papaya
  • 1.5 cup Gluten-free flour
  • 1 cup Coconut sugar
  • 0.5 cup Coconut oil
  • 0.5 cup Almond milk
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Shredded coconut
  • optional for garnish Fresh mint leaves
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a mini cake pan.
  2. In a mixing bowl, combine the red papaya, gluten-free flour, coconut sugar, coconut oil, almond milk, vanilla extract, baking powder, and salt. Mix well until smooth.
  3. Pour the batter into the prepared cake pan and sprinkle shredded coconut on top.
  4. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and let the mini cakes cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.
  6. Garnish with fresh mint leaves, if desired.
  7. Serve and enjoy!
