Ingredients
  • 2 cup Gluten-free flour blend
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Honey
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Almond milk
  • 1 cup Blueberries
  • 1 teaspoon Lemon zest
Instructions
  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the gluten-free flour blend, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, honey, eggs, vanilla extract, and almond milk. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the blueberries and lemon zest.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
