Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1/2 cup Brown sugar
  • 1 Egg
  • 1/4 cup Molasses
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Buttermilk
  • 1 cup Powdered sugar
  • 1/2 cup Cream cheese, softened
  • 1/4 cup Heavy cream
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  4. Beat in the egg, molasses, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk. Mix until just combined.
  6. Drop rounded tablespoons of batter onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Allow the cookies to cool completely on a wire rack.
  9. In a separate bowl, beat together the powdered sugar, cream cheese, and heavy cream until smooth.
  10. Spread the filling onto the flat side of half the cookies, then top with the remaining cookies to create sandwich pies.
  11. Serve and enjoy!
