  4. Beat in the molasses, egg, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Drop rounded tablespoons of the dough onto a lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, beat together the powdered sugar, cream cheese, and vanilla extract until smooth.
  10. Spread a dollop of the cream cheese filling onto the flat side of one cookie and sandwich with another cookie.
