  1. Preheat the oven to 180°C (350°F).
  2. In a pan, sauté the chopped onion and minced garlic in olive oil until golden.
  3. Add the spinach and cook until wilted. Remove from heat and let it cool.
  4. In a bowl, mix the ricotta cheese, grated Parmesan cheese, beaten eggs, nutmeg, salt, and pepper.
  5. Add the cooked spinach mixture to the cheese mixture and mix well.
  6. Roll out one puff pastry sheet and line a greased baking dish with it.
  7. Pour the spinach and cheese mixture onto the pastry.
  8. Cover with the second puff pastry sheet and seal the edges.
  9. Brush the top with beaten egg for a golden crust.
  10. Bake in the preheated oven for 45 minutes or until golden brown.
  11. Let it rest for 15 minutes before serving.
