Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cocoa powder. Add the dry ingredients to the creamed mixture alternately with the buttermilk. Mix well.
  4. Stir in the boiling water. The batter will be thin. Pour evenly into the prepared pans.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then remove from pans and cool completely.
  6. To make the frosting, combine the evaporated milk, sugar, butter, egg yolks, and vanilla extract in a saucepan. Cook over low heat, stirring constantly, until thickened. Remove from heat and stir in the coconut and pecans. Let cool completely before frosting the cake.
  7. Place one cake layer on a serving plate and spread a generous amount of frosting on top. Repeat with the remaining layers. Frost the sides of the cake as well.
  8. Let the cake rest for at least 1 hour before serving to allow the flavors to meld together. Enjoy!
