  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the sake, soy sauce, mirin, and sugar. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the Gardein "Chicken" Scaloppini and cook for 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil and the shiitake mushrooms. Cook for 5 minutes, until the mushrooms are tender.
  5. Pour in the sake mixture and bring to a simmer. Cook for 2-3 minutes, until the sauce thickens slightly.
  6. In a small bowl, mix the cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the sauce and cook for another minute, until the sauce thickens.
  7. Divide the udon noodles among four plates. Top each plate with a Gardein "Chicken" Scaloppini, shiitake sake sauce, pea shoots, green onions, and toasted sesame seeds.
  8. Serve with lime wedges on the side.
