  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press onto the bottom of a 9-inch pie dish.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture into the prepared crust.
  5. Bake for 30-35 minutes or until the center is set.
  6. Remove from the oven and let it cool for 30 minutes.
  7. Arrange fresh mixed berries on top of the pie.
  8. Heat apricot preserves in a small saucepan over low heat until melted. Brush the melted preserves over the berries.
  9. Refrigerate for at least 4 hours or overnight before serving.
