Roll out the shortcrust pastry and cut out circles to fit your pie tin.

Fill each pastry circle with fruit mincemeat.

Place another pastry circle on top and seal the edges.

Brush the pies with beaten egg.

Bake in the preheated oven for 20 minutes or until golden brown.

Allow to cool and dust with icing sugar before serving.
