Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually mix in the flour mixture until just combined. Fold in the fruit cocktail and maraschino cherries.

Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, spread whipped cream over the top of the cake and sprinkle with toasted almonds.
