  1. Crush the chocolate cookies and mix with melted butter. Press the mixture into the bottom of a springform pan.
  2. Dissolve instant coffee in hot water and set aside.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add in the coffee mixture, whipping cream, and vanilla extract. Mix until well combined.
  4. Pour the mixture over the crust in the springform pan and smooth the top.
  5. Freeze the cake for at least 6 hours or overnight.
  6. For the ganache glaze, melt the semi-sweet chocolate and heavy cream in a heatproof bowl over simmering water. Stir until smooth.
  7. Remove the frozen cake from the springform pan and place it on a serving plate. Pour the ganache glaze over the top, allowing it to drip down the sides.
  8. Return the cake to the freezer for another 30 minutes to set the glaze.
  9. Serve the frozen mocha cake with chocolate ganache glaze chilled.
