Ingredients
  • 1.5 cup Pie Crust
  • 2 cup Strawberries
  • 2 cup Rhubarb
  • 1 cup Granulated Sugar
  • 2 tablespoon Cornstarch
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1 beaten Egg
  • 1 tablespoon Turbinado Sugar
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the strawberry-rhubarb mixture into the pie crust.
  5. Place the second pie crust on top and seal the edges.
  6. Brush the beaten egg over the top crust and sprinkle with turbinado sugar.
  7. Cut slits in the top crust to allow steam to escape.
  8. Bake for 45-50 minutes, or until the crust is golden brown.
  9. Remove from the oven and let the pie cool for at least 1 hour before serving.
