  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the fresh raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  3. Roll out the pie crust and place it in a pie dish. Trim the edges.
  4. Pour the raspberry mixture into the pie crust.
  5. In a small bowl, beat the egg with water to make an egg wash. Brush the edges of the pie crust with the egg wash.
  6. Bake the pie in the preheated oven for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Remove the pie from the oven and let it cool for at least 2 hours before serving.
  8. Serve the fresh raspberry pie with whipped cream or vanilla ice cream, if desired.
