  1. Preheat the oven to 375°F (190°C) and prepare the pie crust.
  2. Peel and slice the peaches.
  3. In a mixing bowl, combine sugar, cornstarch, lemon juice, vanilla extract, cinnamon, salt, and sliced peaches. Toss well to coat.
  4. Pour the peach mixture into the prepared pie crust.
  5. Roll out the second pie crust and cut into strips for a lattice design, or leave it whole for a full crust. Place the crust on top of the peach filling and press down the edges to seal.
  6. In a small bowl, beat the egg with water to make an egg wash. Brush the crust with the egg wash.
  7. Bake the pie for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
  8. Remove the pie from the oven and let it cool for at least 1 hour before serving.
  9. Serve the fresh peach pie warm or at room temperature.
