  1. Preheat the oven to 375°F (190°C).
  2. Prepare the pie crust according to the recipe or use store-bought.
  3. In a large bowl, combine the fresh cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the cherry mixture into the prepared pie crust.
  5. Dot the top of the cherry mixture with small pieces of butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Create a lattice pattern on top of the cherry pie by weaving the strips over and under each other.
  8. Trim any excess pie crust and crimp the edges to seal.
  9. Beat the egg and brush it over the lattice crust for a golden finish.
  10. Place the pie on a baking sheet and bake for 45 minutes, or until the crust is golden and the filling is bubbly.
  11. Remove the pie from the oven and let it cool for at least 2 hours to set.
  12. Dust the top with powdered sugar before serving.
