  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine apricots, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out one pie crust and place it in a pie dish. Pour the apricot mixture into the crust.
  4. Roll out the second pie crust and cut it into strips. Create a lattice pattern on top of the apricot filling.
  5. Brush the lattice crust with beaten egg.
  6. Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown.
  7. Remove from the oven and let it cool for at least 1 hour before serving.
