  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs, oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing well.
  4. Stir in the chopped apples and walnuts.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  8. Serve the fresh apple cake as is or with a dusting of powdered sugar.
