  1. In a large bowl, combine sliced peaches, sugar, lemon juice, cornstarch, cinnamon, vanilla extract, and salt.
  2. Stir well to coat the peaches with the mixture.
  3. Let the mixture rest for 15 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Place one pie crust in the bottom of a pie dish.
  6. Pour the peach filling into the pie crust.
  7. Dot the filling with small pieces of butter.
  8. Cover the filling with the second pie crust.
  9. Press the edges of the crusts together to seal.
  10. Cut slits in the top crust to vent.
  11. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  12. Remove from the oven and let it cool completely.
