  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, pulse the hazelnuts until finely ground.
  3. In a large bowl, combine the ground hazelnuts, flour, sugar, and salt.
  4. Add the butter and mix until the mixture resembles coarse crumbs.
  5. Gradually add the cold water and mix until the dough comes together.
  6. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  7. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry.
  8. In a large bowl, combine the cherries, lemon juice, vanilla extract, and cornstarch slurry.
  9. Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie dish.
  10. Transfer the rolled-out dough to the pie dish and press it into the bottom and sides.
  11. Pour the cherry filling into the pie dish.
  12. Roll out the second dough disk and cut it into strips.
  13. Arrange the strips in a lattice pattern over the cherry filling.
  14. Brush the lattice crust with beaten egg and sprinkle with turbinado sugar.
  15. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  16. Allow the pie to cool for at least 1 hour before serving.
