Fondant-Covered Wedding Cake with Raspberries and Chocolate
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
-
In a medium bowl, combine the cake flour, baking powder, and salt. Set aside.
-
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-
Add the flour mixture alternately with the milk, beginning and ending with the flour mixture. Mix just until incorporated.
-
Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
-
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
-
Meanwhile, melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Stir until smooth, then let cool slightly.
-
In a separate bowl, knead the fondant until soft and pliable. Roll out the fondant on a clean surface dusted with powdered sugar.
-
Brush the cooled cakes with a thin layer of corn syrup. Place the rolled fondant over the cakes and smooth it out gently.
-
Decorate the cake with raspberries and drizzle the melted chocolate over the top.
-
Allow the cake to rest for at least 2 hours before serving to allow the flavors to meld together.
-
Slice and serve.
