  1. Melt the dark chocolate and butter together in a heatproof bowl over simmering water.
  2. In a separate bowl, whisk the eggs and caster sugar until pale and thick.
  3. Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly.
  4. Sift in the plain flour and fold gently until well combined.
  5. Pour the batter into a greased and lined cake tin.
  6. Bake in a preheated oven at 180°C (350°F) for 25 minutes.
  7. Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, mix the icing sugar with water until smooth.
  9. Add food coloring if desired and mix well.
  10. Pour the icing over the cooled cake, allowing it to drizzle down the sides.
  11. Let the icing set for about 1 hour before serving.
