Sweet potatoes are an excellent source of vitamin A and are naturally sweet, making them a perfect ingredient for a moist and flavorful cake.

Preheat the oven to 350°F (175°C).

Peel and boil the sweet potatoes until tender, then mash them.

In a bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, cream together the butter, granulated sugar, and brown sugar. Add the eggs one at a time, beating well after each addition. Stir in the mashed sweet potatoes and vanilla extract.

Gradually add the dry ingredients to the sweet potato mixture, alternating with the milk. Mix until just combined.

Pour the batter into a greased and floured cake pan.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
