In a large bowl, combine the flour and salt. Cut the cold butter into small pieces and add it to the bowl. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.

Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 375°F (190°C). Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess. Fill the pie with your desired filling.
