  2. In a large pot, melt the butter over medium heat. Add chopped onion, carrot, celery, and minced garlic. Saute until vegetables are softened.
  3. Add fawn meat and cook until browned.

  5. Pour in red wine and beef broth. Add thyme, rosemary, bay leaves, salt, and black pepper. Stir well.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 1 hour, or until the meat is tender.
  7. Remove from heat and let it cool for about 10 minutes.
  8. Transfer the mixture into a pie crust.
  9. Roll out the remaining pie crust and place it on top of the filling. Seal the edges.
  10. In a small bowl, whisk together egg yolk and milk. Brush the mixture over the pie crust.
