  2. In a large bowl, combine the grated carrots, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, sugar, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing well after each addition.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a mixing bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth and creamy.
  10. Spread the cream cheese frosting over the cooled cake.
