  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Espresso powder
  • 1/2 cup Milk
  • 1 cup Mixed berries
  • 1/4 cup Powdered sugar
Instructions
  1. Preheat the oven to 180°C (350°F). Grease and flour a round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and espresso powder.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Gently fold in the mixed berries.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Once the cake is cooled, sprinkle powdered sugar on top.
