Emerils Key Lime Pie

Preheat the oven to 350°F (175°C).

In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch pie dish.

In a separate bowl, whisk together the egg yolks and condensed milk until well combined. Stir in the key lime juice.

Pour the mixture into the prepared crust and smooth the top.

Bake for 15 minutes, or until the filling is set.

Remove from the oven and let cool for 10 minutes, then refrigerate for at least 2 hours.
