Preheat the oven to 375°F (190°C).

In a mixing bowl, combine elderberries, granulated sugar, cornstarch, lemon juice, cinnamon, and salt.

Roll out one pie crust and line a 9-inch pie dish with it.

Pour the elderberry mixture into the pie crust.

Roll out the second pie crust and place it on top of the filling. Press the edges to seal and make decorative cuts on the top crust.

Brush the top crust with beaten egg.

Place the pie on a baking sheet and bake for 40-45 minutes, or until the crust is golden brown.

Remove from the oven and let it rest for 30 minutes before serving.
