Preheat the oven to 350°F (175°C).

Peel and dice the sweet potatoes. Boil them until tender, then mash them and let them cool.

In a large bowl, combine the mashed sweet potatoes, flour, sugar, vegetable oil, eggs, baking powder, cinnamon, nutmeg, salt, and vanilla extract. Mix until well combined.

Fold in the chopped pecans.

Pour the batter into a greased baking pan and smooth the top.

Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.
