  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a large bowl, combine the strawberries, blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the fruit mixture into the pie crust.
  5. Brush the beaten egg over the edges of the pie crust.
  6. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Remove from the oven and let it rest for 30 minutes before serving.
