Ingredients
  • 6 tortilla Corn tortillas
  • 1 cup Black beans
  • 1 cup Corn kernels
  • 1 piece Red bell pepper
  • 1 piece Green bell pepper
  • 1 piece Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 cup Salsa
  • 1 cup Shredded cheese
  • 2 tablespoon Cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, red bell pepper, and green bell pepper. Cook until softened, about 5 minutes.
  3. Add ground cumin, chili powder, salt, and black pepper. Stir well.
  4. Add black beans, corn kernels, and salsa. Cook for another 5 minutes.
  5. Grease a baking dish. Place a layer of corn tortillas on the bottom.
  6. Spread half of the vegetable mixture over the tortillas. Sprinkle with shredded cheese.
  7. Repeat the layers with remaining tortillas, vegetable mixture, and cheese.
  8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  9. Let it rest for 5 minutes before serving.
  10. Garnish with chopped cilantro and serve hot.
