Ingredients
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 cup Pumpkin puree
  • 1/2 cup Vegetable oil
  • 1 cup Brown sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
  • 1/2 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, mix together the pumpkin puree, vegetable oil, brown sugar, eggs, vanilla extract, and milk. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped walnuts. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
