Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Milk
  • 1 tablespoon Instant coffee granules
  • 1/2 cup Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 cup Chopped nuts (optional)
Instructions
  1. In a mixing bowl, combine the flour, sugar, butter, eggs, vanilla extract, baking powder, salt, and milk. Mix well until smooth.
  2. In a separate small bowl, dissolve the instant coffee granules in 2 tablespoons of hot water. Add the coffee mixture to the batter and mix until well combined.
  3. In another small bowl, mix together the brown sugar, cinnamon, and chopped nuts (if using).
  4. Grease a baking dish and pour half of the batter into the dish. Sprinkle half of the brown sugar mixture over the batter. Repeat with the remaining batter and brown sugar mixture.
  5. Cover the baking dish with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 350°F (175°C). Remove the plastic wrap from the baking dish and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the coffee cake to cool for a few minutes before serving. Enjoy!
