  1. In a bowl, combine graham cracker crumbs, melted butter, 1/4 cup granulated sugar, and salt. Press the mixture into the bottom of a pie dish.
  2. In a separate bowl, whisk together lemon zest, lemon juice, egg yolks, and sweetened condensed milk. Set aside.
  3. In a small saucepan, combine cold water and gelatin. Let it sit for 5 minutes to soften. Then, heat the mixture over low heat until the gelatin dissolves completely.
