  • 1.5 cup Kabocha Squash
  • 1.5 cup All-purpose Flour
  • 1 cup Granulated Sugar
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Vegetable Oil
  • 0.5 cup Milk
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the mashed kabocha squash.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
