  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the chicken breast and cook until browned. Remove from the skillet and set aside.
  4. In the same skillet, add the flour and cook for 1-2 minutes, stirring constantly.
  5. Slowly whisk in the chicken broth and milk, and cook until thickened.
  6. Add the frozen mixed vegetables, salt, and black pepper. Stir to combine.
  7. Return the cooked chicken to the skillet and mix well.
  8. Divide the chicken mixture evenly into two frozen pie crusts.
  9. Place the remaining pie crust on top of each filled pie crust, and seal the edges.
  10. Cut slits in the top crust to allow steam to escape.
  11. Bake for 30-35 minutes, or until the crust is golden brown.
  12. Let the pot pies rest for 10 minutes before serving.
