  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  3. Roll out one pie crust and place it in a pie dish. Trim any excess dough.
  4. Pour the cherry filling into the pie crust.
  5. Dot the filling with cubed butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Create a lattice pattern on top of the cherry filling with the pie crust strips.
  8. Brush the lattice crust with beaten egg.
  9. Bake in the preheated oven for 40 minutes, or until the crust is golden brown.
  10. Remove from the oven and let the pie cool for at least 2 hours.
  11. Dust with powdered sugar before serving.
