  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, frozen mixed vegetables, cheddar cheese, cream of chicken soup, milk, onion, garlic, salt, and black pepper.
  3. Roll out one of the pie crusts and place it in a pie dish.
  4. Pour the chicken mixture into the pie crust.
  5. Roll out the second pie crust and place it on top of the filling. Press the edges of the crusts together to seal.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake for 35-40 minutes, or until the crust is golden brown.
  8. Let the pot pie rest for 10 minutes before serving.
