Ingredients
  • 200 gram Carrots
  • 250 gram All-purpose flour
  • 200 gram Granulated sugar
  • 180 milliliter Vegetable oil
  • 3 number Eggs
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 200 gram Cream cheese
  • 100 gram Butter
  • 200 gram Powdered sugar
  • 1 tablespoon Lemon juice
  • 50 gram Chopped walnuts
Instructions
  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. Grate the carrots and set aside.
  3. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, beat the eggs and add the vegetable oil and vanilla extract. Mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the grated carrots and chopped walnuts.
  7. Pour the batter into the greased cake pan and smooth the top.
  8. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  10. Transfer the cake to a wire rack to cool completely.
  11. In the meantime, prepare the cream cheese frosting by beating the cream cheese, butter, powdered sugar, and lemon juice together until smooth and creamy.
  12. Once the cake has completely cooled, spread the cream cheese frosting evenly over the top.
  13. Optional: Decorate with additional chopped walnuts.
  14. Let the cake rest for at least 1 hour before serving.
