Boston Cream Pie is not actually a pie, but a cake!

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
  5. Pour the batter into two greased and floured 9-inch round cake pans. Smooth the tops with a spatula.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Transfer the cakes to a wire rack and let them cool completely.
  8. In a medium saucepan, combine the heavy cream and cornstarch. Whisk until the cornstarch is dissolved.
  9. In a separate bowl, whisk together the egg yolks, sugar, and salt. Gradually whisk in the hot cream mixture.
  10. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil.
  11. Remove the custard from the heat and whisk in the butter until melted.
  12. Pour the custard into a bowl and cover it with plastic wrap, pressing the wrap directly onto the surface of the custard. Refrigerate for at least 2 hours.
  13. Once the custard has chilled, place one cake layer on a serving plate. Spread the custard evenly over the top. Place the second cake layer on top.
  14. In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the chocolate. Let it sit for a minute, then whisk until smooth.
  15. Pour the chocolate glaze over the top of the cake, allowing it to drip down the sides.
  16. Refrigerate the cake for at least 1 hour before serving.
  17. Slice and serve chilled.
