Easy Boston Cream Pie
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C).
-
In a medium bowl, whisk together the cake flour, baking powder, and salt.
-
In a separate large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients.
-
Pour the batter into two greased and floured 9-inch round cake pans. Smooth the tops with a spatula.
-
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
-
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Transfer the cakes to a wire rack and let them cool completely.
-
In a medium saucepan, combine the heavy cream and cornstarch. Whisk until the cornstarch is dissolved.
-
In a separate bowl, whisk together the egg yolks, sugar, and salt. Gradually whisk in the hot cream mixture.
-
Return the mixture to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil.
-
Remove the custard from the heat and whisk in the butter until melted.
-
Pour the custard into a bowl and cover it with plastic wrap, pressing the wrap directly onto the surface of the custard. Refrigerate for at least 2 hours.
-
Once the custard has chilled, place one cake layer on a serving plate. Spread the custard evenly over the top. Place the second cake layer on top.
-
In a small saucepan, heat the heavy cream until it begins to steam. Remove from heat and add the chocolate. Let it sit for a minute, then whisk until smooth.
-
Pour the chocolate glaze over the top of the cake, allowing it to drip down the sides.
-
Refrigerate the cake for at least 1 hour before serving.
-
Slice and serve chilled.
