Ingredients
  • 1 crust Frozen Pie Crust
  • 2 cup Peaches
  • 1 cup Adzuki Beans
  • 1/2 cup Sugar
  • 2 tablespoon Cornstarch
  • 1/2 teaspoon Cinnamon
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Vanilla Extract
  • 1 beaten Egg
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the peaches, adzuki beans, sugar, cornstarch, cinnamon, lemon juice, and vanilla extract.
  3. Roll out the frozen pie crust and place it in a pie dish.
  4. Pour the peach and adzuki bean mixture into the pie crust.
  5. Brush the beaten egg over the edges of the pie crust.
  6. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Remove from the oven and let it rest for 30 minutes before serving.
