  2. Roll out the shortcrust pastry and cut out circles to line a muffin tin.
  3. Spoon mincemeat into each pastry case.
  4. Cut out smaller circles for the pie lids and place them on top of the mincemeat.
  5. Brush with beaten egg.
  6. Bake in the preheated oven for 15-20 minutes until golden.
  7. Allow to cool, then dust with icing sugar.
