  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the dried apples with enough water to cover them. Let them soak for 30 minutes, then drain and chop them.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the buttermilk and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pecans and chopped dried apples.
  6. Grease and flour a 9-inch round cake pan. Pour 1/4 of the batter into the pan and spread it evenly. Bake for 10 minutes, or until the top is set.
  7. Remove the pan from the oven and carefully place a layer of dried apples on top of the cake. Repeat this process, alternating layers of batter and dried apples, until all the batter and dried apples are used.
  8. Bake for an additional 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  10. Serve the dried apple stack cake as is or with a dusting of powdered sugar on top.
