  • 200 gram Carrots
  • 250 gram All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 3 unit Eggs
  • 200 gram Granulated sugar
  • 150 gram Brown sugar
  • 1 cup Vegetable oil
  • 2 teaspoon Vanilla extract
  • 1 cup Crushed pineapple
  • 1 cup Chopped walnuts
  • 200 gram Cream cheese
  • 50 gram Unsalted butter
  • 200 gram Powdered sugar
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots, crushed pineapple, and chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.
  9. In the meantime, prepare the cream cheese frosting. In a mixing bowl, beat the cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.
  10. Once the cake has cooled, frost the top and sides with the cream cheese frosting.
  11. Let the cake rest for at least 30 minutes before serving.
