Dr. Bird Cake is a traditional Jamaican dessert that gets its name from the Jamaican national bird, the Doctor Bird.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, sugar, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped pineapple, shredded coconut, and chopped pecans.

Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.

In a mixing bowl, beat together the cream cheese, powdered sugar, heavy cream, and lemon zest until smooth and creamy.

Once the cake has cooled, spread the cream cheese frosting evenly over the top. Decorate with additional shredded coconut and chopped pecans, if desired.
