Ingredients
  • 200 gram Carrots
  • 200 gram All-purpose flour
  • 150 gram Brown sugar
  • 100 gram Unsalted butter
  • 2 unit Eggs
  • 120 milliliter Milk
  • 2 teaspoon Baking powder
  • 1 teaspoon Ground ginger
  • 1 teaspoon Fresh ginger
  • 0.5 teaspoon Salt
Instructions
  1. Preheat the oven to 180°C (350°F). Grate the carrots and set aside.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the grated carrots.
  4. In a separate bowl, whisk together the flour, baking powder, ground ginger, fresh ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir until just combined.
  6. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
