  • 1 cup Coconut flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 1 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 1 cup Almond milk
  • 0.5 cup Chopped walnuts
  • 0.5 cup Dried cranberries
  • 0.5 cup Sugar-free powdered sweetener
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together eggs, applesauce, vanilla extract, and almond milk. Gradually add the wet ingredients to the dry ingredients, mixing well. Fold in chopped walnuts and dried cranberries. Pour the batter into a greased cake pan. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with sugar-free powdered sweetener before serving.
