  2. In a large bowl, combine the carrots, whole wheat flour, almond flour, baking powder, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the eggs, applesauce, vegetable oil, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing well.
  5. Fold in the walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, beat together the cream cheese, powdered erythritol, lemon juice, and lemon zest until smooth.
