  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a large mixing bowl, combine blackberries, sugar, cornstarch, lemon juice, and vanilla extract.
  4. Pour the blackberry mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Create a lattice pattern on top of the pie by weaving the strips over and under each other.
  8. Brush the lattice crust with beaten egg.
  9. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbling.
  10. Allow the pie to cool for at least 2 hours before serving.
